My dear mom makes her own soymilk, and she normally uses the soybean pulp to make a certain type of flatbread called 豆渣饼. But this time, I told her I was craving the okara blueberry muffins she used to bake when I was a kid. Sadly, she no longer can find that old recipe, so we improvised.

Blueberry Okara Muffins

Healthy recipe. Bakes 6-8 muffins

  • 120 g flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • pinch salt
  • 1 cup blueberries
  • 80g okara
  • 40g melted butter
  • 3-4 tbsp sugar
  • 120g milk
  • 1 egg
  • vanilla extract

Mix wet, mix dry, combine. Bake 350ºF for 20-25 minutes
